I somehow question his abilities as a trapper, considering most of his pets are not exactly alive.

Have used this twice without needing to use the third pet. There is a bit of wiggle room when the enemy pets die to ensure you maximise the use of shattered defences/headbutt, but it's not one of those strats where you make one mistake and the whole thing is shot.

Third slot should be set as any critter. I only noticed at the end of the fight that rematch put a non-critter pet in there and had to start again...

This is not a good strat. Rebuffing Nature's Ward increases the chance of this failing significantly. You need to Stampede again immediately after using Headbutt on Mist Wraith. This ensures the second round of Stampede is during undead round and you only do one Stampede turn on Crawdead to get the debuff up. Then you can follow up with Headbutt before it uses its shield for maximum damage. First fawn will die and you can use second Headbutt to finish it off.

Otherwise you risk losing the shattered debuff to two Stampede turns vs Crawdead and Stampede cannot penetrate its shield. The 3rd pet arguably could keep it from being a loss but you'd have to be more specific about what pet you're using.
