For undead vs rotgut, I used stratagem 4 but subbed Barnaby with Mr. Bigglesworth w/ Ice Barrier. Worked on the first try. (edited)

This took me several tries as well. The key is Ghastly Kid... it needs to stay alive (not undead racial triggered) when enemy #1 dies and cast Consume Magic to heal up. If that doesn't happen, just quit and restart. (wish I had realized that all the times I did the whole fight through). Good strat though when the first part works out. Thanks! (edited)

Also instead of Barnaby I used Frostwolf Ghostpup. Only needed to use Refuge to stay alive during undead round. Other pets got to that point so 3rd pet could probably be anything with a dodge/heal.

Used recommended pets - tried one time without script, failed - tried two times with script failed. Gonna try others, but just passing that one for the folks looking for a strat - i think this one is too much rng - might have worked if I had attempted a few more times idk

I dont have a Ghost Maggot, and thought to mix up this strat with Lazey's strat they posted. Ghastly kid in 1st slot with 111, Infected Squirrel 212 in 2nd slot, and Barnaby 122 in 3rd. Only needed Barnaby in the last slot to dodge Leftover's undead round. Thanks for the inspo!
