I can't confirm this, but I know the Hatchlings have always been buggy when it comes to fights counting for them, alive or not. Is there some change in a patch note that can confirm what you've said? If not, then it's likely just the fights being their usual, buggy selves.

I got credit towards the quest, with the SH in the 3rd slot and the SH was not summoned prior to starting. Not this particular fight, but I've had the hatchling die during the fight and it still counted toward the quest.
